Ingredients

  • 1 pound salmon fillets (or any preferred fish)
  • ⅓ cup olive oil
  • 1 red bell pepper
  • 1 serrano pepper (or jalapenos)
  • ½ cup chopped cilantro
  • 2 carrots
  • 6 garlic cloves
  • 1 tablespoon tomato paste
  • Sweet paprika
  • Hot paprika
  • Cumin
  • Salt

Instructions

  1. Heat olive oil in a large sauté pan over medium heat. Sauté sliced bell peppers, serrano peppers, carrots, and garlic for 2-3 minutes until soft.
  2. Stir in tomato paste and spices (sweet paprika, hot paprika, salt, cumin, turmeric) and cook for an additional 2-3 minutes.
  3. Add half the cilantro and about ¾ cup water to create the sauce base. Cover and cook for 12–15 minutes until vegetables are tender.
  4. Season salmon fillets with salt and place them into the pan, spooning sauce over them. Cover and cook on low flame for 20–25 minutes.
  5. Just before serving, garnish with lemon slices and fresh cilantro.
