- 3 overripe mashed bananas
- 4 tbsp melted vegan butter
- 3/4 cup maple syrup
- 1 cup unsweetened almond or oat milk
- 1 1/2 cups all-purpose flour (gluten-free if desired)
- 1 cup rolled oats (for the cinnamon swirl)
- 4 tbsp melted vegan butter (for the cinnamon swirl)
- 1/3 cup light brown sugar (for the cinnamon swirl)
- 2 tbsp cinnamon (for the cinnamon swirl)
- 3/4 cup powdered sugar (for the glaze)
- 2 tbsp melted vegan butter (for the glaze)
- 2 oz softened vegan cream cheese (for the glaze)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, mash bananas and mix in melted vegan butter, maple syrup, almond milk, and vanilla extract.
- In another bowl, combine baking powder, baking soda, cinnamon, salt, and flour.
- Gradually fold dry ingredients into wet ingredients until just combined.
- Prepare the cinnamon swirl by mixing oats, melted vegan butter, brown sugar, and cinnamon.
- Layer half of the batter in a greased loaf pan. Sprinkle half of the swirl mixture on top. Add remaining batter and finish with the rest of the swirl mixture.
- Bake for about 45 minutes or until a toothpick comes out clean.
- While cooling, whisk together glaze ingredients until smooth.
- Drizzle glaze over slightly cooled bread before slicing.
