Instructions
- Preheat oven to 350°F (175°C) and grease an 8×4 inch loaf pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, and spices. Set aside.
- In a large bowl, whisk together oil, eggs, sugar, vanilla extract, and pumpkin puree until combined.
- Gradually add dry ingredients to the wet mixture and mix until just combined; do not overmix.
- Fold in 1 cup of chocolate chips and pour batter into prepared loaf pan. Top with remaining chocolate chips.
- Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for about 10 minutes before transferring to a wire rack.
