  • 1 (10 oz) can Rotel
  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (dry, uncooked)
  • 2 cups shredded cheese (any variety)

Instructions

  3. Add beef broth, Rotel, and tomato paste; bring to a boil. Stir in rice and return to a boil.
  4. Cover with a lid, reduce heat, and simmer for about 15 minutes until rice is tender.
  5. Sprinkle shredded cheese on top; cover and cook for an additional 5 minutes until melted.
