  • 1 cup shredded carrots
  • 4 ounces cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk

Instructions

  1. Preheat your oven to 350°F. Prepare an 8×8 baking pan by greasing it or lining it with parchment paper.
  2. In a mixing bowl, whisk together the melted butter and brown sugar until smooth. Add the egg and vanilla extract, mixing until combined.
  3. In another bowl, whisk together the flour, cinnamon, baking powder, and salt. Gradually fold this mixture into the wet ingredients until just combined. Stir in the shredded carrots.
  4. For the cream cheese layer, beat together the cream cheese and granulated sugar until smooth. Add the egg yolk and vanilla extract; mix well.
  5. Pour half of the carrot cake batter into the prepared pan. Spread evenly across the bottom, then dollop spoonfuls of the cream cheese mixture on top. Pour the remaining batter over this layer.
  6. Bake for approximately 40 minutes or until a toothpick inserted comes out clean. Allow cooling before slicing into bars.
