  • 2 tbsp brown sugar
  • 2 tbsp granulated sugar
  • 1 tsp cinnamon

Instructions

  1. Brown the butter in a saucepan over medium heat until it reaches a rich amber color. Chill until slightly thickened.
  2. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  3. In one bowl, whisk together flour, baking soda, baking powder, salt, and spices. In another bowl, mix cooled brown butter with dark brown sugar until clumpy.
  4. Add egg yolk, maple syrup, and pumpkin puree to the sugar mixture; stir until smooth.
  5. Fold in dry ingredients gently until combined; chill if too thin.
  6. Scoop dough into balls and roll in cinnamon-sugar mixture before placing on the baking sheet.
