  • 1/2 pound ground breakfast sausage
  • 6 large eggs (beaten)
  • 8 slices Colby-Jack cheese
  • 8 slices sourdough bread
  • 4 tablespoons soft butter (divided)

Instructions

  1. In a non-stick skillet, cook the ground sausage until browned. Transfer to a bowl and set aside.
  2. In the same skillet, melt 2 tablespoons of butter over medium-high heat. Add the beaten eggs and scramble until just set.
  3. Combine the cooked sausage and scrambled eggs in one bowl.
  4. Assemble the sandwich by buttering one side of each slice of bread. Layer cheese, sausage-egg mixture, and more cheese between two slices, buttered sides out.
  5. Cook in the skillet until golden brown on both sides, about 3-4 minutes per side.
