Ingredients
- 1 cup uncooked quinoa
- 2 cans (15 oz) black beans
- 1/4 cup lime juice
- 1/4 cup olive oil
- 1 shallot (minced)
- 1 Tbsp honey
- 1/2 tsp sea salt
- 1/8 tsp black pepper
- 1 cup chopped cilantro
- 1/2 cup sliced green onion
- 1 cup crumbled cotija cheese
Instructions
- Rinse quinoa under cold water. In a medium saucepan, combine quinoa and vegetable broth or water. Cook according to package directions until fluffy. Let sit covered for 5 minutes.
