Ingredients
- 1 tsp olive oil
- ⅓ cup white onion, chopped
- 1 jalapeño, finely chopped
- 2 15 oz black beans, drained and rinsed
- ¾ cup tomato, chopped
- 1 tsp garlic powder
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp cumin
- ½ tsp salt
- 2 Tbsp hot sauce
- 6 large tortillas (burrito size)
- 6 tostadas
- 6 small fajita size tortillas (to close the wrap)
- ⅓ cup sour cream
- 1½ cup cheese, shredded
- 1½ cup romaine, shredded
- ½ cup salsa (optional)
- 1 avocado, sliced thin (optional)
- 2 Tbsp cilantro, chopped
Instructions
- Prepare all ingredients by rinsing the black beans and chopping the onion and jalapeño.
- In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add garlic powder, chili powder, paprika, cumin, salt, tomatoes, black beans, jalapeños, and hot sauce. Stir well.
- Place one large tortilla on a cutting board. Add a scoop of the bean mixture in the center and top with cheese, sour cream, lettuce, avocado (if using), and a tostada.
- Place a small fajita tortilla over the toppings. Fold in the edges of the large tortilla to seal everything inside.
- Heat a non-stick skillet over medium heat and lightly spray with oil. Cook the wrapped side down for 2–3 minutes until golden brown. Flip and cook for another 2–3 minutes until browned.
