  • 1 tsp olive oil
  • ⅓ cup white onion, chopped
  • 1 jalapeño, finely chopped
  • 2 15 oz black beans, drained and rinsed
  • ¾ cup tomato, chopped
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp salt
  • 2 Tbsp hot sauce
  • 6 large tortillas (burrito size)
  • 6 tostadas
  • 6 small fajita size tortillas (to close the wrap)
  • ⅓ cup sour cream
  • 1½ cup cheese, shredded
  • 1½ cup romaine, shredded
  • ½ cup salsa (optional)
  • 1 avocado, sliced thin (optional)
  • 2 Tbsp cilantro, chopped

Instructions

  1. Prepare all ingredients by rinsing the black beans and chopping the onion and jalapeño.
  2. In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add garlic powder, chili powder, paprika, cumin, salt, tomatoes, black beans, jalapeños, and hot sauce. Stir well.
  3. Place one large tortilla on a cutting board. Add a scoop of the bean mixture in the center and top with cheese, sour cream, lettuce, avocado (if using), and a tostada.
  4. Place a small fajita tortilla over the toppings. Fold in the edges of the large tortilla to seal everything inside.
  5. Heat a non-stick skillet over medium heat and lightly spray with oil. Cook the wrapped side down for 2–3 minutes until golden brown. Flip and cook for another 2–3 minutes until browned.
