Ingredients
- 200 g unsalted butter
- 200 g light brown soft sugar
- 4 large eggs
- 100 g Biscoff spread (smooth)
- 200 g self-raising flour
- 125 g unsalted butter (for buttercream)
- 250 g icing sugar
- 165 g Biscoff spread (for buttercream)
- 9 Lotus Biscoff biscuits (for decoration)
Instructions
- Preheat your oven to 160C Fan/180C/350F/Gas Mark 4 and prepare a greased and lined 2lb loaf tin.
- In a mixing bowl, beat together the butter, Biscoff spread, and light brown sugar until fluffy.
- Add eggs one at a time, mixing until well incorporated.
- Gently fold in the self-raising flour until just combined.
- Pour the batter into the prepared loaf tin and bake for approximately 1 hour and 15 minutes or until a skewer inserted comes out clean.
- For the buttercream, beat together softened butter and icing sugar until smooth, then mix in Biscoff spread and milk to desired consistency.
- Frost the cooled cake with the buttercream and top with Lotus biscuits.
