  • 2 large eggs

  • 1 tablespoon vanilla extract
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt; set aside.
  3. In a large bowl, mix pumpkin puree with granulated sugar and brown sugar until combined. Add eggs, oil, and vanilla extract; whisk until smooth.
  4. Gradually add the dry ingredient mixture to the wet ingredients until just combined.
  5. In another bowl, beat cream cheese with sugar and egg yolk until smooth.
  6. Fill each muffin tin about 3/4 full with batter and add a dollop of cream cheese mixture on top. Swirl gently with a toothpick.
  7. Bake for 18-20 minutes or until a toothpick inserted into the muffin comes out clean. Cool for 10 minutes before serving.
