  • 1/4 cup granulated sugar

Instructions

  1. Preheat oven to 375°F (190°C) and line cookie sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
  3. In a stand mixer, beat together cold butter, brown sugar, granulated sugar, and peanut butter until creamy.
  4. Add the egg, egg yolk, vanilla extract, and optional milk; mix until fully combined.
  5. Gradually add dry ingredients until just combined; fold in peanut butter chips.
  6. Scoop dough into balls, roll in granulated sugar, and place on cookie sheets.
