Ingredients

  • 4 egg yolks
  • 3/4 cup sugar (165g)
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 1/2 cups heavy cream (360g) OR 4 egg whites
  • ~30 ladyfingers
  • 1 1/2 cups strong black coffee
  • 2 tbsp cocoa powder for dusting

Instructions

  1. Brew strong black coffee and let it cool.
  2. In a bowl, beat egg yolks and sugar until pale, then mix in mascarpone and vanilla.
  3. In another bowl, whip heavy cream until soft peaks form; fold into mascarpone mixture.
  4. Quickly dip ladyfingers in cooled coffee and layer them in a baking dish with half of the mascarpone mixture.
  5. Repeat the layers with remaining ingredients.
  6. Chill for at least 4 hours before serving, dusting with cocoa powder just before serving.
