  • 2 large baking potatoes
  • 200g block of feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 head of garlic
  • 1 lemon, quartered
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 200C (390F).
  2. Wash and cube the potatoes, then par-boil in salted water for 6-8 minutes. Drain and let steam dry.
  3. In a baking dish, combine the potatoes with olive oil, thyme, oregano, salt, and pepper.
  4. Roast for 30-40 minutes until golden and crispy.
  5. Add feta cheese and lemon quarters to the dish; continue roasting for another 15 minutes.
  6. Mix in mashed roasted garlic and fresh basil before serving.
  7. Drizzle with honey just before enjoying.
