  • 3 cups butternut squash, peeled and cubed
  • 340 g Brussels sprouts, halved
  • 225 g bow tie pasta
  • 340 g cooked smoked sausage (cajun or regular)
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • Olive oil, salt, pepper, smoked paprika, and fresh thyme

Instructions

  1. Preheat the oven to 200°C.
  2. Toss butternut squash with olive oil, salt, and pepper; roast on a baking sheet for 15-20 minutes until tender.
  3. Toss Brussels sprouts with olive oil, salt, and pepper; roast for 20-30 minutes until crispy.
  4. Boil salted water in a pot; cook bow tie pasta until al dente. Drain while reserving some pasta water.
  5. In a large skillet, heat olive oil and brown sliced sausage; set aside.
  6. Sauté garlic in the skillet until fragrant; add butter and cooked pasta.
  7. Combine roasted vegetables and sausage with the pasta; season with smoked paprika and fresh thyme.
