  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch (or 2 tablespoons all-purpose flour)
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)
  • salted caramel sauce

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Wrap a 9-inch springform pan in tin foil to prevent leaks, then lightly grease it.
  3. Mix graham crumbs, brown sugar, cinnamon, and melted butter to form the crust; press it into the bottom of the pan.
  4. Prepare the apple filling by peeling and slicing apples, mixing them with brown sugar and cinnamon.
  5. For the cheesecake filling, beat cream cheese until smooth; add sugars, cinnamon, cornstarch, vanilla extract, sour cream, and eggs until just combined.
