  • 2 cups digestive cookies or graham crackers
  • ½ cup butter (melted)
  • 3 cups fresh apple cider
  • 3 cream cheese bricks (softened)
  • 1 cup brown sugar
  • 1 cup sour cream
  • 3 large eggs
  • Mulling spices (cinnamon, nutmeg, cloves)

Instructions

  1. Boil apple cider with mulling spices for about 1 hour until reduced to 1/3 cup. Let cool.
  2. Preheat oven to 350°F. Prepare the crust by blending crushed cookies, melted butter, salt, and powdered sugar. Press into an 8” springform pan and bake for 10 minutes; cool.
  3. Lower oven to 325°F. Beat softened cream cheese and brown sugar until smooth. Add sour cream, vanilla extract, salt, cinnamon, and reduced cider; mix well.
  4. Incorporate eggs one at a time along with flour until just combined.
  5. Pour filling into the cooled crust and bake in a water bath for about 90 minutes until edges are set but center is still wobbly.
  6. Cool gradually in the oven with the door slightly open for about 30 minutes before refrigerating overnight.
