Instructions
- In a mixing bowl, blend together 1 cup of oats, 2/3 cup of peanut butter, and 1 1/2 tablespoons of honey until smooth.
- Stir in 1/4 cup of chopped walnuts, 1 tablespoon of sunflower seeds, and 2 tablespoons of shredded coconut until fully combined.
- Shape the mixture into small balls or patties using about 1 1/2 tablespoons per cookie.
- Melt 2 tablespoons of dark chocolate with 1/2 teaspoon of coconut oil in a microwave-safe bowl for 15-30 seconds, stirring until smooth.
- Drizzle the melted chocolate over each cookie before refrigerating them for at least one hour.
- Store remaining cookies in the fridge for up to five days.
